My husband and I are sailors - when we go on vacation we like to rent little sailboats. I'm wondering what all my options are at WDW. I guess you can rent little sailboats at the Caribbean Resort, and it looks like they have some at the Poly. Is this correct? Are there other resorts with sailboat rentals?

Most of the resorts on bodies of water have boats of some sort... The only problem, not a lot of real room to sail...

I would suggest any of the MK resorts, since they will have TONS of room: Contemporary, Grand Floridian, Polynesian, Wilderness Lodge....
I would even go so far as suggest the Wilderness Lodge specifically.... their portion of the lake is huge and not as travelled as the MK Loop... But they are connected, so you can travel between the two...
You may want to call ahead and make sure they have the type of craft you are looking for... Most of little motorboard, some have jetskis, lake cruisers, etc.... I think I've seen sailboats, but don't remember when...

Disney World is the greatest!!! You can see a Yeti, go back in time, parisail, golf, drive a race car, take the monorail, camp, water ski and more!
